Varietal composition: Xinomavro 60 %, Syrah 20 %, Merlot 20 %
Vineyard: “Red Soil”
Vinification: Destemming, no crushing, cold soak – skin contact under controlled conditions, alcoholic fermentation at gradually increasing temperatures. Nine months in new French and American oak barrels separately for each variety.
Characteristics: A blend with ruby red color, aromas of ripe red and black fruits and velvet tannins.
Food Pairing: Ideal match with red meat, roasts with rich sauces, yellow matured cheese.
