Varietal composition: Xinomavro 100 %
Vineyard: “Red Soil” at 630 m. altitude.
Vinification: Destemmed but not crushed saignée from the red. Cold soak at 5º C for 4 hours, low temperatures during alcoholic fermentation in stainless steel tank, bâtonnage on fine lees for 2 months.
Characteristics: Rosy pink with saumon hints, strawberry and framboise, distinctive acidity and freshness.
