Varietal composition: Xinomavro 60 %, Cabernet sauvignon 20 %, Montepulciano 20 %
Vineyard: “Kokkina Chomata” (Red soil) and “Konti Karidia” (Short walnut tree)
Vinification: Destemming, no crushing, cold soak – skin contact under controlled conditions, alcoholic fermentation at gradually increasing temperatures. Maturation in French oak casks medium – medium plus toast for 9 months, separately for each variety.
Characteristics: Bright ruby color. Complex bouquet of sweet red fruits, cherry and plum. Tomato notes. Velvet tannins, spicy aftertaste
Food Pairing: Perfect match with roasted meat, barbeque and smoked cheese and charcuterie.
