Varietal composition: Merlot 100%
Vineyard: “Kokkina Chomata” (Red soil)
Vinification: Destemming, no crushing, cold soak – skin contact under controlled conditions, alcoholic fermentation at gradually increasing temperatures. Maturation in French oak casks medium – medium plus toast for 12 months.
Tasting Characteristics: Deep ruby color. Ripe red fruits, black pepper and smoked bacon. Spicy, full bodied, velvet tannins. Long aftertaste and aging potential.
Food Pairing: Perfect match with roasted meat and red sauces, spicy sauces, yellow cheese.
